Menu Plan Monday! (July 7th)


I have been wanting to participate in Menu Plan Monday (MPM) over at Laura's for a while now. Finally, I am getting around to posting my first menu here.

I am going to try two new recipes! This is what our week looks like:

Monday: Italian Sausage & Rigatoni (Bertolli), Rolls, & Salad

Tuesday: Pork Chops, Cheddar Bacon Potatoes, & Cream Style Corn

Wednesday: Stroganoff, Homemade Bread, & Green Beans

Thursday: Stuffed Bell Peppers, & Salad

In other news, we had a lot of fun in Tennessee! My in-laws live way out in the country, so it was nice and quiet. We had a great time just RELAXING! There was a lot of talking, and laughing going on. Of course, there was delicious food. You HAVE to have lots of that on the 4th right? LOL! And Mr. Mister decided that his inner child had to come out and play, so he went and bought fireworks to set off.

Where are all the pictures of our good times, you ask? Well, there aren't any! Can you BELIEVE that I didn't take any pictures? Actually, I did "attempt" to take a few of the fireworks, but they were so blurry (I forgot my tripod at home) that I deleted them.

One of these years, I am going to take AWESOME pictures of fireworks! ONE OF THESE YEARS! LOL!

Yellow Watermelon?

Today, Mr. Mister and I went to the commissary. While we were there Mr. Mister picked up a watermelon. We came home, he started cutting the watermelon, and then I heard him say, "what the he??" we both stopped, looked at it, and said in unison "A YELLOW WATERMELON?"

I have NEVER in my 40+ years heard of, or seen a yellow watermelon. So, I immediately hopped on the computer to look it up. Apparently, there are all kinds of yellow watermelons out there! (Who KNEW?) LOL!

For anyone out there who has never tried a yellow watermelon, they are DELICIOUS! (Well, at least this one was! LOL) I told Mr. Mister that we need to order seeds so we can plant our own!

A Little Of This And That!

Hey everyone!

Not much going on right now! (Except, that it's RAINING again!) I have been busy doing the "Flylady" thing! This week, I scrubbed the front of my kitchen cabinets, washed the curtains in the kitchen, dining room, and living room, and did other things that haven't been done in a while. I really need to tackle the area on top of my cabinets! I am NOT looking forward to THAT! Why? Because, I have all kinds of stuff up there that needs to be cleaned! Things like, artificial plants, glass baubles, antique beaters, a doll my mother made, a clown that Mr. Mister's parents bought me in Las Vegas (almost 20 years ago) a gold bell that Mr. Mister brought back from Korea, and even a fairy house teapot!



The above pictures only show a "portion" of the area above my cabinets! NOW do you understand why I am not looking forward to it? ROFL!

I've also been looking for new recipes to try. Brat Girl and I have been craving potato soup in a bread bowl. (YEAH, I know it's HOT outside! LOL! But, all food that has been cooked is HOT when you eat it! Soup is no different! LOL) So, I went looking at All Recipes and found these!



Baked Potato Soup I

Cook Time: 25 Minutes Ready In: 40 Minutes
Yields: 6 servings

"This soup incorporates pre-baked cubes of potato with onion, crumbled bacon, cheddar cheese and sour cream in a milk soup base which has been thickened with a roux."

INGREDIENTS:
12 slices bacon
2/3 cup margarine
2/3 cup all-purpose flour
7 cups milk
4 large baked potatoes, peeled and cubed
4 green onions, chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper

DIRECTIONS:
1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
2. In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
3. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

Italian Bread Bowls

Yields: 8 servings

"These cute little bread bowls are a great way to serve soup in the wintertime. I usually serve a hearty potato soup when I have the time to bake them. They freeze for up to 1 month, if desired."

INGREDIENTS:
2 (.25 ounce) packages active dry yeast
2 1/2 cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
2 tablespoons vegetable oil
7 cups all-purpose flour
1 tablespoon cornmeal
1 egg white
1 tablespoon water

DIRECTIONS:
1. In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
2. Add salt, oil and 4 cups flour to the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well with an electric mixer at medium speed after each addition.
3. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
4. Punch dough down, and divide into 8 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.
5. Preheat oven to 400 degrees F (200 degrees C). In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash.
6. Bake in preheated oven for 15 minutes. Brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.
7. To make bowls: Cut a 1/2 inch thick slice from top of each loaf; scoop out centers, leaving 3/4-inch-thick shells. Fill bread bowls with hot soup and serve immediately.

YUM! I'll be adding these to the menu! I cannot wait to try them! If you read the reviews, other people have made suggestions on how to change things, or make them even better, so I may play with the soup a bit. We'll see!

Favorite Cookies!

OK! I was wanting something sweet! (When I am NOT wanting something sweet?) So, I decided to make one of our favorite kinds of cookies! They are called Oatmeal Scotchies! Several years ago, I noticed the recipe on a bag of Nestle Butterscotch Morsels. Can you say YUMMY!



If you would like to have a new addiction, here is the recipe:

Oatmeal Scotchies

1 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. (2 sticks) butter, softened
3/4 c. sugar
3/4 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla extract or grated peel of 1 orange
3 c. quick or old fashioned oats, uncooked
1 (12 oz.) pkg. (2 c.) Nestle's Toll House butterscotch flavored morsels

Preheat oven to 375 degrees. In small bowl, combine flour, baking soda, salt and cinnamon, set aside.

In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla extract or orange peel until creamy. Gradually beat in flour mixture. Stir in oats and Nestle's Toll House butterscotch flavored morsels. Drop by measuring tablespoonfuls onto ungreased cookie sheets. Bake 7 or 8 minutes for chewier cookies; 9-10 minutes for crisper cookies. Makes about 4 dozen cookies.

Roses!

In the last cake decorating class, of course #1, we finally learned how to make (and I am using that term very lightly) roses. The one thing I had been waiting for since the first day of class!

Let me just say this! Roses are NOT EASY! Especially, when they keep sliding right off the little tool thingy!

But, here are my attempts! Two of the roses were made by ME, (I am sure you can tell which two those are! LOL) and one was made by our teacher.





I have to say that this was the best tasting cake I have made! It was an orange flavored cake mix and it was DELICIOUS! My son went CRAZY over it.

We won't be starting course #2 until January, so there won't be anymore boring cake pictures for a while! LOL

Although, I did ask for this book for Christmas!



I want to be able to practice different techniques. So you may see some of that popping up on here!

AWWWWWWWWWW! Who am I kidding! I won't practice!

Cake Decorating - Revisited

Last night was cake decorating classes. We learned how to make drop flowers and leaves. I was very excited about the way our cakes turned out. Here is mine:



I need to practice some more. I kept turning my hand too fast while making the flowers, and they didn't flatten out as much as they should have. I also made my leaves a lot more squiggly than they normally are, but I don't think it looks too shabby for a first try! Here are a few more pictures.



Brat Girl's cake turned out BEAUTIFUL! I LOVE the colors she chose. They went together perfectly! You can see pictures (warning - they are large) of it here and here.

Favorite Halloween Candy!

So, Cheryl asked everyone what their favorite Halloween candy was, and I decided to put my reply on here!

We all know that everyone hopes for all of the great HERSHEY'S chocolate bars in their trick-or-treat bag. That's just a given!

BUT, my favorite Halloween candy is the Caramel Apple Pops! LOVE THEM! They have a green apple sucker in the center, with caramel on the outside. SO VERY YUMMY!





Make sure you run out and buy a bag! You won't regret it!

Fun Weekend - Part Three

Saturday morning we woke up and I wondered if we were actually going to Tennessee or not. Mr. Mister had mentioned something about possibly staying home, and honestly that suited me just fine. I really disliked the idea of driving all that way for one night. Even if the thought of going to Beale Street appealed to me.

One bummer about not going was that we had planned to stop and eat at Lambert's Cafe "The Only Home of Throwed Rolls" on the way down.



The phone rang, and it was Mr. Mister's mother. She wanted to know if we were coming down or not? Since he never really said "no, we aren't coming," I knew we were. He made hotel reservations, while I started getting dressed, and more annoyed at the thought of the upcoming drive ahead of me.

We left around noon, and the communication in the car was non-exsistant. Mr. Mister would try every so often to draw me out of my mood, but I wasn't having it. I was really good at staying annoyed! LOL Finally, I started responding with more than one word. We talked about different things, and after a while Mr. Mister pointed out a sign, showing us that we were getting closer to Lambert's Cafe. I started getting a little excited! Not only about eating at the place I had heard so much about, but because, once we got there, we would be at our halfway point in the not so fun driving part of our journey.

We arrived and looked at the parking lot. O MY GOSH! There were people EVERYWHERE!



I was thinking that we would just turn around and go to Wendy's or something. But we decided to check on the wait time. It was approximately 45 minutes. We chose to wait. As they kept calling names I began to think that we were going to end up sitting next to a bunch of strangers. They would call up 20 or so people at a time and take them all back to the tables together. After all, it was family style eating.
They called our name and I rushed so that we would be first in line, at least then we could grab the end of a table, and not be stuck in the middle somewhere. I was very happy when they sat us in a booth by ourselves. They took our drink order and we looked over the menu. I already knew what I was having. I had planned it several days before. The Chicken & Dumplings of course! Everyone that knows me, knows that is what I would be having! LOL
Our drinks came and I was surprised to see that they gave us HUGE mugs full of our beverage of choice. I'm talking 48oz sized mugs.



It was the best sweet tea! I don't know if it was because I was thirsty or what, but I couldn't stop drinking. After ordering, we kept looking around, checking the place out.



Suddenly, we were hearing "HOT ROLLS" "HOT ROLLS" being yelled above the sound of everyone talking. A boy was rolling a cart around full of rolls that had just come out of the oven. People were putting their hands up in the air waving that they wanted a roll. The boy would pick up a roll and throw it across the room at the waving hands. People were catching (some were dropping) hot rolls everywhere.




A girl was walking around saying "Sorghum?" to everyone. She stopped at our table and said "Don't ya'll want a hot roll?" She called the boy's name that was throwing the rolls, and Mr. Mister caught one right away. He threw another one to me, and I was thrilled that I didn't drop it on the floor! I opened the hot roll and buttered it up! The girl asked if I wanted sorghum on my roll. I told her that I didn't even know what sorghum was. She replied that it was molasses. I had never had molasses on a roll before, but decided to try it. YUMMY!



As we waited for our order, several employees were walking around with big silver bowls yelling "FRIED POTATOES" "FRIED OKRA" "BLACK EYED PEAS" and "MACARONI & TOMATOES." These were what they called "extras" and you could have as much of them as you wanted throughout your meal. Not that we needed any extras because, when our meal arrived there was enough food on the plate to feed several people. Mr. Mister had ordered the fried chicken. He had two pieces of chicken, a loaded baked potato, and green beans. I had the chicken & dumplings, green beans, and applesauce.



It was wonderful! I even made the comment that it was better than Cracker Barrel. Again, anyone who knows me, knows that Cracker Barrel is one of my favorite places to eat, so that was saying A LOT!
We walked out the door feeling VERY full, with a can of sorghum tucked under my arm, and plans to stop there again on the way home!

Back to the car, and on the road again for another 2 1/2 hours.

We finally made it to Mr. Mister's mother's house.

We talked for a while, catching up on things, and then we hopped into Mr. Mister's sister's (say that quick three times!) car, and headed toward Memphis so that we could check into our hotel, and "party" on Beale Street.

The weather was GREAT, and it brought everyone out. It was like being on Spring break or something. (Elmo REALLY enjoyed dancing with the girl in the picture. He danced in the street for at least 20 minutes)



After several drinks, and "Big Ass Beers," we were really starting to enjoy ourselves. (Thank goodness our hotel was within walking distance!)



As we walked up and down Beale Street, we saw an artist (Wolf Simone,) sitting and painting pictures. It was awesome to see what he created just by using a few tools and several cans of spray paint. The painting he did in front of us, turned out to be a collage of Memphis attractions, turned into a cityscape, with planets above. It was VERY cool!



We decided to stop at Pat O'brien's for something to eat. When we walked in, there was a fountain with water and fire coming out of it. It was GORGEOUS! The whole area looked like an outdoor cafe, but it was indoors. We sat there for over an hour just talking and having a good time. The atmosphere was perfect!



There was different kinds of music coming from every bar, alley, and available spot along the street. We stopped and listened at many different places, but this blues band was one of our favorites.



Mr. Brother-In-Law was really getting his groove on while he listened to them play!



It was HILARIOUS! We were all cracking up watching him dance!

Unfortunately, we found the band too late, and only got to hear a couple of songs before they started packing things up for the night.

So, we wandered some more. We saw all kinds of interesting things! There were people dancing, people drinking, people doing flips down the road. We even got to watch the police, that were on horseback, arrest someone and take them away!

But the thing that really caught my interest, was seeing some of the girls walking down the street wearing outfits they had NO BUSINESS wearing. I began taking pictures of all of them. My plan was to put them up on my blog to show people what they "should not" wear out in public. But, I have decided not to offend anyone reading this blog by showing them on here. LOL!

Finally, at around 1:30 am, we headed back to the hotel. I was exhausted, but had a really, REALLY good time! (Yes, Mr. Mister has been rubbing that fact into my face ever since!)

BUT, I still was not enthused about the drive all the way back home!

Did someone mention stopping at Lambert's Cafe again??????????

She's Killing ME!

I am trying "really hard" to stay on my diet but, I am over at Pioneer Woman's blog seeing THESE!



She always has the best recipes, and the photographs she takes are phenomenal! She goes through step-by-step instructions with photos for EACH step! Go ahead and take a look! You know you want to! (Yep! I'm an enabler! LOL!) Cinnamon Rolls Recipe

This one will definitely be added to the list of foods to make for Christmas. Could you imagine waking up on Christmas morning to these! OOOOOOOOO I am drooling over here, and I think I've gained five pounds just by reading the recipe!

I guess I will actually have to get UP and do the new workout by Leslie Sansone that arrived here yesterday.
I won't mention the part about it totally kicking my (non exercising in months) butt!


WHEW DOGGIE! Can someone pass the cinnamon rolls please! HA!

A Midwest Thing!



I don't ever remember having kettlecorn until moving to Illinois. My first reaction was ummmmmm I don't know if I like it or not. But after years of tasting it from different vendors set up outside of Sam's or Lowe's it has really grown on me. Today, Mr. Mister and I were walking through Dierberg's and they had this out to be sampled. This is the BEST kettlecorn I have ever tasted!! The perfect blend of sweet and salty. And the popcorn is SO crisp! They aren't lying when they say it's hard to eat just one bite! YOU CAN'T!! What's even better? Happy Mother's Day!!


At 5:30 this morning the kids came through the bedroom door singing the Boyz II Men "A Song For Mama" and delivering this very special treat. These two things have been a "tradition" that they have been doing for many years now. The first year Mr. Mister helped them start this by buying the fruit (strawberries, bananas, kiwi, grapes, pineapple, and apples with whipped cream mixed through out) and helped them make it. They put the fruit in one of my beautiful "Princess House" margarita glasses (which are only used when they do this...LOL). Doesn't it make such a beautiful presentation? A few years later they came up with the idea to add the song. They would come into the room carrying a "boom box" with the song playing. Unfortunately, we no longer have the cassette or CD so they have resorted to singing the chorus of the song to me. LOL It is all so very sweet. I look forward to this every year. I love those two kids SO MUCH! They are the best! Here are the words to the chorus of the song:

I know what you're thinking..........WHY in the world did they wake me up at 5:30? Well, technically I was already awake.....because of the early morning potty run. LOL But they both had to be at work. Ricardo had to be a work by 6:00 and Danielle had to leave at 6:15. I did lay back down for a few minutes but decided to get back up and dye my hair. So YEP! I am sitting here typing this with my hair all slicked back with hair dye. ROFL. NOT a pretty sight!!

We shall see how the rest of the day unfolds. I know Rick is planning on taking me out to lunch. I was also hoping to go to a winery, but I don't think we will be able to fit everything in today. We have to be back home before six because we have someone stopping by later this evening.
